1.HOPPER MAKER
Discription
First, hoppers are a sort of rice flour crepe, sometimes made with an egg in the centre and usually eaten for breakfast.
They are made by pouring batter into a heated, oiled pan but unlike flat pancakes, they are concave and crispy on
the edges–achieved by making them in hopper pans.
How we use?
Lift the hopper pan off the stove and swirl it around so that the batter covers the pan***.
Once you have done this, place the pan back on the stove and cover the hopper pan with its lid to cook.
Cook the hopper for about 2.5 to 3 mins on medium-high to allow the bowl structure of the hopper to form.
Top Tips how to make Perfect Egg Hoppers:
Make sure that the pan is well-greased and is smoking hot when you first add the hopper batter.
As soon as you ladle the batter into the pan, you must tilt it and swirl the batter around so it coats the whole pan.
You must add the egg as soon as the batter has been added and is coating the whole pan; you can add a whole egg or a mixed egg.
To obtain the slightly spongy and steamed texture, you MUST cover the hoppers as they cook.

String Hopper Idiyappam is a steamed food which is very popular in sri lanka It is also known as ‘Sevai’. It is a favorite food for kids.

Roasted red or white Rice flour (Ready made string hopper flour (roasted rice flour)
How to use
In a dry bowl take two cups roasted rice flour (flour should be fine & flowing without clumps).
Add 1 tsp table salt, mix well.
Let 4 cups of water boil vigorously. Gradually add the boiling water to rice flour until you can form a dough that does not stick to the bowl (It is important that you get the right consistency of the dough, to get the right texture of the string hoppers – light, fluffy & dry to the touch. Also without the right consistency, it will be hard to squeeze the fine strings through the mold).
Fill the mold with dough and squeeze the fine strings of flour on to the watties to hand pressure with handle
Stack the watties on top of each other and steam until done.
With one cup of rice flour you can make 6-7 small string hoppers (4 inches in diameter). It is advisable to make the dough in small quantities (2-3 cups of rice flour) at a time. String hoppers are delicious with Kiri Hodi, Lunu Miris or Seeni Sambol, Malu Ambulthiyal or Meat curry.
